- ½ cup water
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt

- 4 large eggs, separated
- 1 teaspoon vanilla extract
- 1 cup buttermilk
For the Coconut-Pecan Frosting
- 1 cup evaporated milk
- 1 cup granulated sugar
- 3 large egg yolks
- ½ cup unsalted butter
- 1 teaspoon vanilla extract
- 1½ cups sweetened shredded coconut
- 1 cup chopped pecans
Instructions 👩🍳
- Prep: Preheat oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- Melt chocolate: In a small saucepan, melt chocolate with water over low heat. Cool slightly.
- Mix dry: In a bowl, whisk flour, baking soda, and salt.
- Cream butter & sugar: Beat butter and sugar until fluffy. Add egg yolks one at a time, then stir in melted chocolate and vanilla.
- Combine: Alternate adding flour mixture and buttermilk to batter. Mix until smooth.
- Whip whites: Beat egg whites until stiff peaks form. Fold gently into batter.
- Bake: Divide batter among pans. Bake 30–35 minutes until toothpick comes out clean. Cool completely.
- Frosting: In a saucepan, cook evaporated milk, sugar, egg yolks, and butter over medium heat until thickened (about 12 minutes). Remove from heat, stir in vanilla, coconut, and pecans. Cool before spreading.
- Assemble: Spread frosting between layers and on top. Leave sides bare or frost lightly for rustic look.
