Rich, flavorful, and irresistible—these birria tacos are made with slow-cooked beef, infused with spices, and served with crispy tortillas dipped in consommé. A true Mexican classic!

For the Birria Meat:
- 2 lbs boneless beef chuck roast
- 1 lb oxtail or bone-in short ribs
- 1 tsp neutral oil (avocado or vegetable)
- Kosher salt, to taste
For the Sauce & Consommé:
- 6 dried guajillo chiles, stemmed & seeded
- 2 dried ancho chiles
- 2 dried pasilla chiles
- 4 cloves garlic
- 1 large onion, quartered
- 2 medium tomatoes, roasted
- 2 tsp cumin
- 1 tsp oregano
- 2 bay leaves
- 4 cups beef broth
For the Tacos:
- Corn tortillas
- Shredded birria beef
- Chopped onions & cilantro
- Lime wedges
- Shredded cheese (optional)
Directions 👩‍🍳
- Prep chiles: Toast dried chiles lightly, then soak in hot water until softened.
- Blend sauce: Combine softened chiles, garlic, onion, tomatoes, cumin, oregano, and beef broth. Blend until smooth.
- Sear meat: Heat oil in a large pot. Season beef with salt and sear until browned.
- Simmer: Pour sauce over meat. Add bay leaves. Cover and simmer 2–3 hours until beef is tender and shreddable.
- Shred beef: Remove meat, shred, and return to pot. Keep consommé warm.
- Assemble tacos: Dip tortillas in consommé, then fry lightly in a skillet. Fill with shredded beef, cheese (optional), onions, and cilantro.
- Serve: Plate tacos with a side of consommé for dipping. Garnish with lime wedges.
